ε-polylysine can greatly inhibit the growth of bacteria, yeasts and moulds bacteria, especially to the Gram+ bacteria which can’t easily inhibit by others. As a good preservative, ε-PL is characterized as being high safety, water-soluble, stable at high temperatures, widely usage, non prejudice to the taste, antibacterial in neutral or subacidity conditions. Because of the stability at high temperatures, it can inhibit some heat-resistant bacillus after heat treatment and some -form noncontractile siphovirus as well. ε-Polylysine was found to be non-toxic at high levels in acute animal studies and was not mutagenic in bacterial reversion assays. ε-Polylysine is “Generally Recognized As Safe” (GRAS) by the FDA.ε-polylysine has been used mainly as what improves in keeping quality of food and applied to a box lunch and prepared foodstuffs in a convenience store or the like. It can be used in rice, noodles, cakes, snacks, and ice creams, salad, canned foods and meat products. In food application, it is usually applied with alcohol, organic acids, or glyceride, etc..
